A Japanese-style handle multipurpose knife, made by Mutsumi Hinoura. Easy to use, easy to sharpen, fun to look at, and pleasing to use in the kitchen. The blade is made of shirogami 2 high carbon steel, with stainless steel cladding. The black finish only adds to the modern feel of an otherwise traditional tool.
The blade is western style, sharpened equally from both sides (double bevel).
The Santoku is a Japanese multi-purpose knife. It literally means ''3 purposes'', implying it can be used for fish, meat, and vegetables. This knife is the to-go knife of most chefs. Mr. Mutsumi Hinoura is the 4th generation blacksmith of the infamous Hinoura Hamono. After studying at university, he joined his father, a legendary bladesmith, and started making world-class kitchen knives. Outsourcing nothing, and doing every single step by himself, this man is living up to everyone's expectations. Preparing and forging his own steel, hammering it to shape and relying on simple methods and his sixth sense to know when a blade is ready, with no modern machinery anywhere near him. In collaboration with Tagai, he made this series to show that a Japanese blade can be part of a modern home in the 21st century.
