Bonsai trees are "trained" using wire. To reach the desired shape a master grower will add enough wire around the branches and then use a couple of pliers to bring the branch into position.
In terms of size, the difference is mostly on your preference. Both large and small pliers will bend thick wires. If you are readjusting a thicker than the usual branch, then the larger one is the better tool.
The head is straight and the handle is bent inwards making it easy to turn in your palm if you want to remove the bark of the tree to create a jin.
